Catoctin Creek Rye Whiskey Barrel Aged Imperial Stout

It was back in late April, well before our taproom was finished when we brewed this imperial stout. Very limited quanity was made as we brewed it in our pilot system. The use of Roasted Barley along side Crystal, Caramalt, Honey, and Chocolate malts add great complexity to the rich flavor of this stout. After we brewed this batch, we split it in two. This half of this batch was brewed and transferred to our pilot fermenters; after fermentation, it was then transferred to another Catoctin Creek rye whiskey barrel where it aged for some seven and a half months. Both beers take on a pronounced rye whiskey character from the months they spent aging in whiskey barrels. Both are great sipping beers for the cold winter months ahead.
